Ingredients

  • 2 cups Fiesta Tropicalé Unsweetened Organic Shredded Coconut

  • ¼ cup Fiesta Tropicalé Virgin Coconut Oil, melted

  • ¼ cup Fiesta Tropicalé Light Coconut Milk

  • ½ tsp. vanilla extract

  • 10 ounces Wilton Candy Cane Candy Melts or white chocolate melts with 1/4 tsp. peppermint extract

  • 2 candy canes, crushed

Mix together the shredded coconut, coconut oil, coconut milk and vanilla. Mix thoroughly until well-combined.

Gently roll mixture into 1 ½-inch balls. Transfer to a baking sheet lined with parchment paper. Chill in the refrigerator for 30 minutes until bites are firm.

In 30-second increments, melt candy melts in the microwave, stirring well at intervals. Repeat until completely melted.

Dip coconut bites in bowl of candy melts and roll around with a fork until the bites are well-coated. Transfer bites to the parchment paper-lined baking sheet.

Sprinkle crushed candy canes over the bites. Enjoy!
