Valentine's Coconut Truffles
Here's to our one true love... Coconut! ❤️ Celebrate your loved ones with this easy, no-bake, sinfully sweet coconut-filled chocolate. Chilled to chewy perfection, one bite of this decadent coconut truffle is never enough.
Fiesta Tropicalé Organic Unsweetened Shredded Coconut
💝 ⅔ cupsweetened condensed milk
💝 1 ½tsp. vanilla extract
💝 1 ½ cupsemisweet chocolate chips
💝 2 tspcoconut oil, to thin out chocolate
HOW TO MAKE IT
𝟙 Chop coconut in a food processor. Mix together coconut, condensedmilk, and vanilla in a medium bowl until well-combined. Chill for around 10minutes.
𝟚 Roll chilled batter into 1-inch balls and transfer toparchment-lined cookie sheet.
𝟛 Freeze for at least 15 minutes or up to several hours.
𝟜 While they're freezing, melt chocolate in microwave in 30 secondincrements. If chocolate is too thick, add a few teaspoons of coconut oil tothin out.
𝟝 Dip each ball in the chocolate and roll. Let excess chocolate dripoff. Place on parchment-lined cookie sheet. Top with sprinkles or shredded coconut.
