Ugly Sweater Cookies
Nothing says sweater weather like these festive Ugly Sweater Cookies made with coconut oil ⛄️ These cookies are fun to decorate with your own design 🎨
Fiesta Tropicalé Virgin Coconut Oil
✅ 2 eggs
✅ 1 cup sugar
✅ 1 1/2 tsp clear vanilla extract
✅ 2 tsp baking powder
✅ 3 cups flour
✅ 6 cups confectioners sugar
✅ 2 egg whites
✅ 1/2 tsp vanilla extract
✅ Red gel food coloring, black gel food coloring, green gel food coloring
HOW TO MAKE IT
Preheat oven to 350°F. Cream oil and sugar together. Add eggs and clear vanilla extract. Mix well.
In a separate bowl, mix together flour and baking powder until well combined. Gradually add sugar/egg mixture to the flour mixture.
Using a rolling pin, roll the dough to about 1/4 inch thick. Use a cookie cutter to cut out dough. Arrange on parchment paper on a cookie sheet.
Bake cookies for 10 minutes. Remove from oven and let cool.
For the icing, combine confectioners sugar, egg whites and vanilla extract together.
Divide the icing into 2 bowls. In one bowl, add 8 drops of red food coloring. Stir well. In the other bowl, add 6 drops of green food coloring and mix well.
Use a decorating bag with a small round tip to pipe edges and fill in half of the cookies with red icing.
For the rest of the cookies, use the green icing to pipe edges and fill in shirts.
Allow icing to dry for 2-3 hours.
Decorate the cookies. Make dots on shirt using an edible food marker, add sprinkles for ornaments, or use a toothpick to draw reindeer.
Let dry for 2-3 hours. Enjoy!
