INGREDIENTS

✅ 1 (13.5oz.) can Fiesta Torpicalé Organic Coconut Milk
✅ 8 ounces fresh spinach
✅ 1 large tomato, diced
✅ 1 small yellow onion, diced
✅ 1/4 cup water
✅ 2 cloves garlic, minced
✅ 1 Tbsp. grated ginger
✅ 2 Tbsp. olive oil
✅ 2 tsp. ground cumin
✅ 1 tsp. garam masala
✅ 1/2 tsp. turmeric
✅ ¼ tsp. cayenne pepper
✅ 3/4 tsp salt (or to taste)

HOW TO MAKE IT

1️⃣ Gently heat coconut milk and spinach in a large pot over medium heat until spinach is just wilted.
2️⃣ In a separate pan, sauté onion, garlic, and ginger in olive oil until softened. Add cumin, garam masala, turmeric, and cayenne to the skillet. Cook for 2 minutes.
3️⃣ Stir in tomato and 1/4 cup water. Cook for about 8 minutes. Add coconut milk and spinach to pan and, gently stirring until well-combined. Add salt to taste. Serve and enjoy!
