  • 14 ounces Fiesta Tropicale Sweetened Coconut Flakes

  • 14 ounces sweetened condensed milk

  • 1 teaspoon vanilla extract

  • 2 egg whites

  • 1/4 teaspoon kosher salt


  1. Preheat the oven to 325 degrees F.

  2. Mix together coconut, condensed milk, and vanilla.

  3. Whip the egg whites and salt on high speed using an electric mixer until stiff peaks form.

  4. Fold the egg whites into the coconut mixture. Drop the batter onto sheet pans lined with parchment paper.

  5. Bake for 25 to 30 minutes, until edges are golden brown.
