Gluten-Free Chocolate Coconut Nests
A no-bake, gluten-free Easter treat that's quick and easy to make. It's chewy, chocolatey and indulgent, the perfect homemade surprise for Easter morning.

INGREDIENTS
1 1/2 cups Fiesta Tropicalé Unsweetened Organic Coconut Flakes
3/4 cup chocolate chips
Easter candy (mini eggs, jelly beans, chocolate eggs)
HOW TO MAKE IT
Lightly toast the coconut by spreading shredded coconut on a foil-lined pan and place in 400 degree oven for 5 - 10 minutes until the coconut is lightly browned.
Place chocolate chips in a microwave-safe bowl and melt in microwave in 30-second increments.
Combine toasted coconut and melted chocolate in a bowl.
Scoop out around 2 tablespoons of coconut-chocolate mixture and place on sheet lined with parchment. Shape the mixture into a nest and top with 2 - 3 pieces of Easter candy. Repeat with the rest of the coconut-chocolate mixture.
Chill in refrigerator until nests set. Enjoy!
