INGREDIENTS

✔️ 3/4 cup butter ✔️ 1 egg ✔️ 1/2 tsp. vanilla extract ✔️ 1 cup Fiesta Tropicalé Sweetened Shredded Coconut ✔️ 1/2 cup granulated sugar ✔️ 2 1/2 cups all-purpose flour, sifted ✔️ 1/2 tsp lemon or almond extract  

HOW TO MAKE IT

  1. Cream butter. Gradually add sugar, mixing thoroughly after each addition. 

  2. Add egg and beat well. Gradually add flour, mixing well after each addition. 

  3. Blend in vanilla extract, almond extract and coconut. 

  4. Divide dough into two and wrap in parchment paper. Chill for 30 minutes. 

  5. Preheat oven to 400°F. Roll out chilled dough and cut into desired shapes with cookie cutters.

  6. Bake for around 6 minutes until edges are lightly golden. 

  7. Let cool and enjoy!
