Coconut Spiced Curry Burger 🍔
Ingredients
For burger patties:
✔️ 1 lb. ground pork
✔️1/2 medium onion, grated
✔️ 3 large garlic cloves, grated
✔️ 1/2 tsp fresh ginger, grated
✔️ 3 Tbsp. Fiesta Tropicalé Organic Unsweetened Coconut Flakes, plus more for garnish
For sauce:
✔️ 2 Tbsp. + 1tsp red curry paste, divided
✔️ 3/4 tsp koshersalt
✔️ 1/2 cup + 2Tbsp. coconut cream
✔️ 1 1/2 TbspVirgin coconut oil
✔️ 2 tsp peanut butter
✔️ 4 buns, toasted
✔️ 1/4 cup chopped cilantro
✔️ 2 large green onions, chopped
Instructions
𝟏. In a medium bowl, combine ground pork, onion, 2 garlic cloves, ¼tsp grated ginger, 1 ½ tablespoons curry, salt, 2 Tbsp. coconut cream and coconut flakes. Mix well until thoroughly combined. Form into four patties.Chill for 15 minutes.
𝟐. Heat 1 tsp. coconut oil in a saucepan. Sauté garlic and ginger, then add curry paste and mix well. Add ½ cup coconut cream, brown sugar, and peanut butter. Mix well. Bring to a boil and simmer until thickened, around 5minutes.
𝟑. To cook burgers, add coconut oil to a skillet. Add burger patties and cook until cooked through, about 4-5 minutes per side.
𝟒. Serve burger patty with sauce. Sprinkle with chopped cilantro and green onion.
